I really like these graphs from the 'Glucose Goddess' which show the impact of different types of food on our blood glucose. When blood glucose spikes up into the red area, this is proinflammatory and can set up a spiking and troughing of glucose over the day, also disrupting other hormones insulin, cortisol and also the sex hormones. Eating a protein based breakfast keeps blood sugar in check and has a stabilising effect on appetite and other hormones. It's really not just about calories in and calories out.
